3 ways with porridge (that aren’t porridge) – Protein cookies

In my never-ending quest to figure out which carbs are good and which are bad, I’m forever toying with porridge.

These may not be the prettiest biscuits in the world, but they’re tasty and full of protein, so I’ll take that over looks any day..

Strawberry Protein Cookies

I actually found this recipe here, but she uses raspberries, flour and american measures, whereas I’ve gone with strawberries, protein powder and common sense.

2 x Oatso Simple Original porridge oats sachets
50g protein powder
1 tsp baking powder
1/2 tsp cinnamon
2 tbsp coconut butter
1/2 cup raw flower honey
85g strawberries

Heat the coconut butter and honey together in a saucepan over a low heat and leave to cool slightly (this stops the honey just sticking to the bottom of the mixing bowl and being no bloody use at all). Measure all the dry ingredients together, and then add the honey and coco mixture, stirring well. Add your strawberries, chopped into small cubes for the best chance at even distribution, and leave to cool down in the fridge for about half an hour. I was impatient first time I made them, and my lovingly portioned cookies all melded into one in the oven. So wait!

Spoon your cookies onto greaseproof paper on a baking tray, and bake for about 15 minutes at about 180 degrees C.
