Ugly but delicious bacon sandwich

I’m sure there are people out there who can make a bacon sandwich look gorgeous, but I’m not one of those people.

It’s no beauty queen, but this is a great midweek supper when you can’t be bothered to cook something proper, but you want something that’ll fill your belly and put a smile on your face.

What you’ll need:

A soft ciabatta roll – make sure it’s fresh, the bacon should be crispy, not the bread!
A few rashers of bacon
Green pesto
Tabasco

Spread a thin layer of green pesto (homemade or from the supermarket) onto your bread, then cook your bacon they way you like best. For me, that’s aaallllmost burnt, so its nice and crispy and there’s no horrid soggy fat around the edges. Pop your bacon on your roll and top with a liberal shake of tabasco and a grating of cheese, and eat like a scandinavian open sandwich, or break your jaw (and your waistband) and eat it like a real man would. Yum.
